Overnight oats, a new breakfast craze that several of my clients have shared with me. I had heard of them and seen them on my many nights perusing Pinterest for recipes, but was never one to try them because I typically have the time in the morning to make a good breakfast.
Well, wouldn't you know, I found one night that I looked at my schedule for the next day and saw I was going to be at the gym from 5:45am to 5:30pm and I would need to prepare for being there all day. And if you know me, I am a breakfast LOVER. I have to have breakfast. I personally think the day is not even considered a day if I don't have breakfast. As I pondered in the kitchen, I thought about my clients Summer and Jamie and how much they LOVE overnight oats and figured I would give it a try.
One thing great about this recipe, you can quickly make it the night before or if you meal prep on a certain day, you can plan for a couple days in advance. I don't suggest making more than 3 days worth. Another great thing about this recipe, it's SUPER flexible. You can make it pretty much with ANYTHING you like! Yogurt, regular or fat free milk, peanut butter, protein powder, nuts of any kind, chocolate chips, chia or flax seeds, egg whites, ANYTHING! If if fits your macros, put it in there.
My recipe for the featured picture:
1 Mason Jar (or small container)
1/2 cup quick oats
2/3 cup HEB Original Almond Milk
1.5 oz fresh blueberries
1.5 oz fresh chopped strawberries
2 Splenda packets
Instructions: The night before, place all ingredients into mason jar or small container, stir, and place in refrigerator. The next morning, pull out the jar, and stir before you enjoy!
